Investigation on infection of various slaughtered poultries organs to Salmonella bacterium in West Azarbaijan

Today poultry industry plays an important role in supplying protein needs of populations. One of factors that affect these products is a group of bacteria that is called Enterobacteriacea especially Salmonella. This bacterium is a serious infecting source of human food products and it is a pathogenic agent in humans. The aim of this research is a comparative study of infection to salmonella bacterium in different organs of poultries such as heart, liver, gizzard, fat around anus using bacterial cultivation on samples taken from slaughterhouses in West Azerbaijan. Thus, resourcing to 12 slaughterhouses of West Azerbaijan organic samples from heart, liver, gizzard and fat around anus were taken in sterilized conditions, and then inoculated in selenite F broth cultivation. After 24 hours, enrichment and incubation was taken to Mcangi Agar, SS Agar and XLD cultivation environments. From whole 1728 samples which were taken equally 432 samples from each part, 360 Salmonella samples were identified. They included 198 samples from anus fat, 38 samples from heart, 53 samples from liver, and 71 samples from gizzard. According to vastness of affection resources to salmonella, it is necessary to do bacteriological and serological test on slaughterhouses and relevant staffs in poultry industries.
