Determination of lead concentration in chicken breast and liver tissue a number of poultry farms in Qom and Semnan provinces

Poultry meat is considered as a source of animal protein with high biological amino acids, many vitamins and minerals. Food contamination, including animal protein sources of heavy metals is a major threat to humans and animals for a long time, if exposed, will likely detrimental effects. The aim of this study was to determine the concentration of lead in breast and liver tissues in poultry farms in Qom and Semnan provinces. A total of 50 samples of poultry production fields were randomly selected. After acid digestion, the standard method was to measure their lead concentrations by atomic absorption by furnace. Based on statistical analysis, there is no significant difference between cities (P≥0.05). Comparison between International Standard lead Allowance in Chicken Tissue (0.1 mg / kg) and Total Liver Muscle (0.40 ± 0.08 mg / kg) and Breast Muscle (0.28 ± 0.07 mg / kg) The results of the present study showed a significant difference (P≤0.05). The high levels of lead in the internal organs of the chickens could have come from of anthropogenic activities in the environment, feeds and water fed to the chickens. Lead contamination of the chicken tissues is a potential public health hazard. Therefore, monitoring the concentration of this element and paying more attention to it is a requirement of public health.
