Application of Mentha Spicata essential oil and whey protein for coating of fishery products
Fish and fishery products contain high amounts of free fatty acid and therefore, are susceptible to chemical and microbial deterioration during storage. One of the modern methods to increase the shelf life of fishery products during storage is the application of protein based edible coatings. Whey protein coatings that enriched with antimicrobial compounds such as herbal essential oils are more affective and therefore they can maintain the quality of products. In this article, application of whey protein coating contained Menhta Spicata essential oil in fish and fishery products were reviewed.
