Study on physico-chemical properties of two potato cultivars of Golestan province for application in processing and storage

Potato is one of the most important crops so that determination of suitable varieties for processing and storage has special importance. Since physico- chemical properties of potato have determinative role in kind of its use and reduction of losses, in present study two varieties of potato, Kozima and Draga, were stored for 4 months in cold storage with 7˚C and 85-90 %RH. Physical characteristics including length, diameter, and number of eyes, specific gravity and solid soluble substances and also chemical properties such as dry matter, reducing sugar, starch, protein, fat and ash were evaluated at the end of storage. The results show that Kozima variety is better for processing because of more tuber weight, low peeling wastes, high dry matter and starch and low reducing sugar, whereas Draga variety is more suitable for storage because of low qualitative changes during storage period.
