Review on physico-chemical properties and application potential of starch from some potato varieties in Golestan province

Starch is the major component of potato dry matter and its special characteristics such as high phosphorous content and big granules are different from other starches. In general, potato starch characteristics are different due to variety and climatic conditions. Draga, Marfona, Sante, Concord, Agria and Ribarca are common potato varieties which are cultivated in Golestan province. The maximum and minimum dry matter is belong to Concord (14.6%) and Draga (10.6%), respectively. Reducing sugar content in mentioned varies is 0.18%. Phosphorus and protein content of their starch are 425-645 ppm and 0.05-0.08%, respectively and the mean diameter of starch granules is 45-53µ. There is high demand for functional starches in different industries especially food industry. Therefore such starches can be substituted with chemically modified starches.
