Determination of peroxide value and visual color of Zoolbia and Bamieh oils in the holly Ramadan in Shahrekourd

Thermal oxidation is essential decomposition process oil in which hydroperoxide is produced. Free radicals are formed by the decomposition of hydro peroxides that have cytotoxic and genotoxic nature. Peroxide value is an index by which to determine the extent of the oxidation of fats and oils and their health is determined. The aim of this study is to determine peroxide value and visual color of Zoolbia and Bamieh oils in the holy month of Ramadan. this investigation is a cross-sectional study. In this study, total 222 the oil samples were collected randomly which were used for the production Zoolbia and Bamieh by environment health inspectors of healthcare networks from small manufacturing units across of Chahar Mahal and Bakhtiari province during holy month of Ramadan in 2014. These samples were sent for healthy control to food and beverage libratory of Shahrekourd University of medical sciences. The experiment was performed according to Iodometery method. In this study oil color samples was checked apparently. This study showed that peroxide value of 64.9% (144 of 223) of the oil samples tested was higher than national standard maximum limit of edible oils (2 mEq per kg). The average peroxide value these oil samples was 2.94 mEq per kg. In total the color of 36.9% (82 of 222) of oil samples were dark to black. The above results show that more than two- third of Zoolbia and Bamieh oils are not safe and those threaten the health of consumers. Therefore, training and inspection to food handling are essential.
