Development of an electronic tongue based on glassy carbon electrode for quantification of ascorbic acid

Abstract:
Fruit juices has many benefits to human health due to the essential vitamins, they are vulnerable to fraud and gross. The compounds in food are found complex, so it is difficult to determine the quantitative and qualitative content values. The use of chemical methods to measure and recognize the complex compounds are often time-consuming and relatively expensive. Recently electronic tongue widely used in the food industry in particular have shown promising outlook for demonstrating the quality and originality of the product. In this study, an electronic tongue system based on glassy carbon electrodes and cyclic voltammetry is used for quantification of ascorbic acid. The results indicated that the proposed electronic tongue is able to quantify ascorbic acid. Furthermore, the results revealed good correlation (y=0.0622x-1.1547,R^2=0.998) between ascorbic acid concentration and cathodic peak current.
